Having spent the last ten years living in the South West, it occurs to me that there is a world class level of local food production, preparation and knowledge. Regional food sourcing isn’t a new concept. The Californians made it popular with the likes of Chez Panisse in the 1970’s, changing the way chefs and consumers alike thought about the provenance of the food they prepared and ate.
